Sake-steamed Sea Bream Milt from Kyoto’s famed Kikunoi Restaurant by Chef Murata. Sea cucumber (the orange puree) and sea bream spawn only once a year in spring, so their roe and milt are available very fleetingly. This dish embodies the Japanese expression of “Ichigo ichie,” meaning “treasure everything meeting, for it will never happen again.”
